I am not clear on which folders are backed with the option checked for WordPress core (including any additions to your WordPress root directory).
What are the advantages and disadvantages for using this option.

It backs up everything that’s in the directory that contains wp-admin, wp-includes, etc. (except stuff that’s already in another backup, e.g. plugins, themes).
The main advantage is that you might have manually stored some other content in that directory, and need to make sure it is backed up. Or if you’ve modified part of WordPress core by hand, then you will want your changes backed up. Otherwise, it’s useful if you want to have a complete backup in one place. Other than that, it’s not hugely useful, since WordPress core itself can always be downloaded afresh from wordpress.org. See: https://updraftplus.com/shop/more-files

wp-config.php isn’t in wp-content (it can either be one or two levels above that), but your point still stands.
UD current has options to exclude things from a backup, but not to “exclude everything except this”. However, you could get very close by just excluding wp-admin,wp-includes; that only leaves a few small files (one of which is wp-config.php). So, you’d get the small backup zip (which I assume is what you wanted), and it’d include wp-config.php.
